1 Open Prairie® Natural* Angus skirt steak, about 1 pound
1 loaf whole grain French bread
Extra virgin olive oil
Fresh cracked black pepper
Kosher salt
Caramelized Onions:
2 tablespoons extra virgin olive oil
2 cups yellow sweet onions, sliced thin
1/2 teaspoon kosher salt
Garlic-Basil Mayo:
1/4 cup mayonnaise
2 garlic cloves, minced
1 pinch kosher salt
1 teaspoon fresh basil, chopped
2 dashes Worcestershire sauce
Slice 2 cups of onion and sautee in a saucepan. With a small food processor, make a paste with mayonnaise, minced garlic, kosher salt, basil and Worcestershire sauce. Cover and keep chilled
Slice the French bread and toast it.
Drizzle extra virgin olive oil over the skirt steak and season both sides liberally with kosher salt and fresh cracked pepper
In a grill pan with high heat cook for approximately 2 to 3 minutes per side for medium-rare.
Remove and let rest for 3 to 4 minutes.
Spread mayo mixture on toasted bread.
Add thinly sliced meat and top with sauteed onions.
